Tortilla Sausage Burger

Switch up your regular tortilla snacks into these lovely, super speedy smash sausage burger tacos. Just press sausage meat onto a tortilla, pan-fry and top with all your favorite burger fillings. Great for feeding a crowd, the family, or of course just the two of you! 

 

Ingredients 

6 large sausages (any flavour sausages) 

5 mini tortillas 

Grated cheese 

2 tomatoes 

1 brown or red onion (finely dices) 

Iceberg lettuce (shredded) 

Sliced pickles/gherkins 

Pickle mayo 

Burger sauce 

Pizza seasoning 

Onion salt 

Garlic salt 

Salt and pepper 

 

Instructions 

  • Deskin your sausages by cutting through the skin and down the sausage, then peeling the skin off. Place in a bowl. 

  • Smash the sausage mix until all mixed up. Season with spices and salt and pepper to taste. 

  • Add finely diced onion to mix.  Mix well (I like the onion as it gives great crunch to the taco). 

  • Prep, slice fillings for burger tacos: slice tomatoes, lettuce and gather any other fillings you might enjoy. 

  • Heat pan and add a drizzle of olive oil.  Have on medium-high heat. 

  • Lay a mini tortilla on your work surface, then place the sausage on top. Don't make it too thick as it will need to be cooked through.  Use the back of a spoon to press it out into a thin, even layer on your taco.  

  • Repeat with the remaining tortillas and sausages. 

  • Cook the tacos. Drizzle a little olive oil into a large pan and set over high heat. Once hot, set a topped taco, sausage side down, into the pan and press down firmly to ‘smash’ it into the pan. I like to use a flat spatula or a gloved hand for this. 

  • Cook for four minutes (or until meat is fully cooked), then flip to crisp up the other side of the taco for another 30 seconds.  

  • Remove and repeat with remaining tacos.  

  • Top the tacos. Add your lettuce, tomato, pickles, and your choice of sauces. 

  • Fold in half and enjoy.  Serve with chips/fries or just by themselves. 

 

INGREDIENT NOTES: Use any sausage you like here!  

Add any spices you like to change it up, and of course any fillings that take your fancy 

PREP AHEAD: The tacos can be topped ahead of time – you could top them the night before you want to use them. Just make sure to not store them directly on top of each other in the fridge as they will stick together. Use parchment paper/grease proof paper to separate the layers.
